Buffalo Pizza

BobmLately I've been exploring beef alternatives.  Buffalo is definitely a great, lower fat replacement.  I riffed on this recipe and came up with the soon-to-be, made-again Buffalo Souljah Pizza.  One confession:  I was too lazy to make dough from scratch (I used thin crust Boboli pre-made pizza crust).

Ingredients

1 16-ounce ball purchased fresh pizza dough or pre-made crust
1/3 cup finely grated Parmesan cheese
2 teaspoons finely chopped fresh rosemary
1/2 teaspoon dried crushed red pepper
Coarse kosher salt

2 tablespoons olive oil
1/2 lbs ground buffalo (seasoned with kosher salt, fresh ground pepper, 1/4 tsp. ground Cayenne, 1/2 tsp. fennel seed)
1 small red onion, thinly sliced
6 ounces fresh mushrooms (I used a mix of shiitake, cremini, and porcini), sliced
1 cup coarsely grated mozzarella cheese

  • Preheat to 450°F
  • Sprinkle dough/crust with 1 teaspoon rosemary and 1/4 teaspoon crushed red pepper
  • Heat 1 tablespoon oil in large skillet over medium-high heat. Add seasoned ground buffalo
  • Sauté until brown, breaking into small pieces with back of spoon, about 5 minutes
  • Lower heat to medium.  Add onion and mushrooms to skillet. Sauté until crisp-tender, about 5 minutes
  • Cover skillet and lower heat to medium-low.  Sauté for another 10-15 minutes transfer to plate.
  • Sprinkle remaining rosemary; sprinkle with salt and pepper.
  • Top crustwith 3/4 cup mozzarella, then onion, buffalo, and mushroom mixture
  • Bake 7-10 minutes - until crust bottom is crisp and brown
  • Sprinkle  remaining mozzarella and parmesan
  • Slice it up and enjoy
